The Lay Centre’s mission is to offer a home away from home for its residents. Meal times are key moments for community building, sharing and dialogue and since October 2012 our new cooks, Laura and Sandro, overseen by Chef Andrea, have been cooking up wholesome meals, using local produce, for our residents and guests alike. Here’s a taste of one of our autumn soups:
Lentil Soup with Rice or Pasta (for 4): 200 gr. dried lentils, 180 gr. Rice, 150 gr. tomato salsa/sauce, 1 finely chopped garlic clove, sprig of rosemary, extra virgin olive oil, 500 ml vegetable or meat stock, bread croutons:
Put lentils in a big pan, cover with cold water and half cook (following time indicated on packet). In another pan heat the olive oil, garlic and rosemary until the garlic is golden, then add the tomato and cook for a few minutes. Drain the lentils, saving the cooking water. Add part of the lentils to the tomato based sauce, salt to taste and cook for a few minutes, then blend. Add half the lentil cooking water to the stock, bring to the boil, add the remaining lentils and finish cooking. Now add semi-cooked pasta or rice (cooked separately) and continue cooking until done. Taste and season with salt and pepper. Serve in soup bowls, adding a drizzle of extra virgin oil and bread croutons. Buon Appetito!
